What are the apps that you use and recommend for note-taking? And is there any particular method that you follow in note-taking?

I use Obsidian and when watching a course or reading an eBook I follow The Cornell Note Taking Method.
might try this. my only problem w/ Obsidian is syncing across devices. is there a reliable way to sync notes from windows and android thats cheap and not too much setup?

I tried so many things. I think a combination of apple notes, notion is working ok for me.
Mac has this nice smart corners, which will allow me to launch the notes app in a flash, where I usually dump that I'm thinking. Once I have something a little more solid, I will offload it to notion and try to create connections(akin to zettelkasten).

Otherwise, if I'm in a meeting(we use MS suite), then I turn on the transicption and use the meeting notes that MS teams gives. This way, everyone in my team has access to it.

You could sync the folder with Gdrive or Onedrive
