need help with creating ui/ux designer portfolio

hi guys, i've been working in the field of design for many years but most of my work came from the word of mouth and i never got the chance to create a high end portfolio for myself, i need to show my skills in a way that matches my level to go farther in life and i am in a state that is crucial as i am getting married and i need a higher earning job, i would really appreciate your guidance on the matter on who to copy or maybe where to start as to what works and what doesn't
